The only thing better than a pumpkin cookie in the fall is one filled with delicious cream cheese icing!



Pumpkin Gobs with Cream Cheese Icing


4 oz Cream Cheese
½ stick of Butter (softened)
¼ teaspoon Vanilla Extract
1 ½ cups Confectioners’ Sugar
16 Soft Baked Pumpkin Cookies (Apple Cookie & Chocolate Co.)

Cream Filling:
  1. Using an electric mixer on medium, mix the cream cheese, butter and vanilla until blended.
  2. Add confectioners’ sugar and mix on low until fluffy.

Pumpkin Gob:
On the flat side of a single cookie scoop 2 heaping tablespoons of icing. Add the second cookie to create a your delicious gob! Repeat until the icing is gone and enjoy!
